Baiocchi supervises every retail point of sale bearing the REDIPANE bakery-café trademark. He coordinates all operative management-related aspects and monitors their strengths and weaknesses. When new stores are being opened, he is the one who can provide the required expertise and training, including help with management issues. He assists customers with bureaucratic and administrative aspects, ensuring accuracy in supply procedures. He coordinates retail start-up activities and manages and coordinates the café area and relevant suppliers.
